Pseudo Sue, named after the Field Museum’s tyrannosaurus skeleton Sue, was a nod to Clark Lewey’s love for the museum, history and dinosaurs. When representatives from the museum found the beer, they decided to partner with Toppling Goliath to make it the signature brew of the Field Museum cafe.
